Energy snack

In a coffee mug mix:

1 Tablespoon of coconut oil

Pinch of stevia

1 teaspoon baking powder

2 teaspoons of cinnamon

¼ Cup of ground flax meal

1 egg

Opt. 2 teaspoon of carob

Stir and cook in microwave for 50 seconds.

 

Almond-Cashew Butter Fudge

Ingredients:
1/2 cup creamy almond butter (unsalted)
1/2 cup cashew butter (or use 1 cup almond butter)
1/4 cup coconut oil
2 Tbsp. honey or pure maple syrup (I also imagine you can use a few drops of stevia if you want sugar free)
1/2 teaspoon Himalayan sea salt

*For a sugar-free option, just use a few drops of liquid stevia instead.

Directions:
1.) Mix all the ingredients together in a bowl, until smooth and creamy.

2.) Add the mixture to a square baking dish lined with plastic wrap, then smooth with a spoon or your hands.

3.) Place in the freezer for about 30 minutes to 1 hour.

4.) Remove from freezer once fudge is hardened, cut into 3/4 – 1″ squares.

5.) Sprinkle a little extra Himalayan salt on top, serve and enjoy!

 

Banana Bread Drop Cookies

2 Large Ripe bananas
1 cup Rolled Oats (can use Gluten Free Oats)
1/4 Cup Chopped Walnuts
May add cinnamon to taste if desired.

Mash Bananas in a bowl. Add oats and walnuts. Drop tablespoon amount of batter onto baking sheet. Bake 12-15 min at 350 degrees.
